Trend watch: Blonde chocolate

As anticipated, we’ve been receiving more & more requests from our customers for blonde chocolate this year. But it’s not a product everyone knows about. So, we thought we’d take a closer look at just what it is and where it comes from.

What is blonde chocolate?

Blonde chocolate starts out life as white chocolate – so it uses no cacao solids, only cacao butter.

The name ‘blonde’ comes from the slightly toasted colour of the finished chocolate – which also gives you a clue about how it is made. Blonde chocolate is created by adding heat to white chocolate, causing a reaction that lends a unique, caramelised taste to the finished product.

Reportedly first created by accident in the unattended bain-marie of a pastry chef, blonde chocolate has a subtle flavour profile of butterscotch and shortbread that’s deliciously delicate and absolutely irresistible.
