The dark side of delicious: Halloween trends for 2027

September 28, 2026
Halloween is becoming an occasion for more than sweets and spooky decorations. From bakery and chocolate to ice cream and desserts, it gives brands a chance to take familiar favourites somewhere unexpected. Mintel’s research points to opportunities beyond traditional trick or treating confectionery, while its review of new product launches highlights the appeal of seasonal and limited edition treats. For Halloween 2027, we see three ideas worth exploring: a more considered aesthetic, contrast in every bite and familiar products with a seasonal twist.

Halloween, with a lighter touch

A product does not need every colour and symbol of the season to feel like Halloween. Dark chocolate, a warm orange accent or one playful shape can signal the occasion while letting the food take centre stage.

That leaves room for different expressions of Halloween. A colourful ghost topped cupcake can be fun and immediate. A dark chocolate dessert with a subtle orange layer can feel more indulgent. The visual direction depends on the product and the people it is made for.

More than a spooky look

Appearance gets attention, but the eating experience has to deliver too. Mintel’s Intentionally Sensory prediction points to more thoughtful combinations of taste, visuals and texture. Its chocolate innovation research also highlights the appeal of contrasting textures.

For Halloween, that might mean a crisp biscuit topping on a soft brownie, chewy fudge inside a chocolate treat or a crunchy inclusion against smooth ice cream. These contrasts bring an element of surprise without relying on unusual flavours alone.

Give familiar favourites a seasonal twist

A Halloween launch does not have to start with a new format. Cookies, cakes, chocolate and desserts already have a place in people’s routines. A limited edition version can make them feel special for the season.

Dark Biscuit Crumb and Dark Chocolate Flavoured Biscuit Peas can bring depth and crunch to bakery or desserts. Orange Crisp or Fudge Duo Choc & Orange can add a flash of colour and a different bite. Ghosts, pumpkins, themed sprinkles and coloured writing icings can provide the final cue that makes a creation unmistakably Halloween.

The strongest ideas make those ingredients part of the experience. The decoration catches the eye, the flavour makes the product appealing and the texture gives people something to discover.

One to watch: Day of the Dead

Día de Muertos is a distinct Mexican celebration with its own traditions and meaning. Its vibrant colours and decorative forms offer a different visual direction from Halloween’s darker palette. For brands exploring this occasion, the opportunity is to create something thoughtful, with colour, flavour and texture working together rather than relying on decoration alone.

Caramel is more than a flavour: finding the right texture for your application

Caramel can be soft and chewy, crisp and brittle, or light and aerated. For an R&D team, the choice goes beyond flavour. The inclusion has to deliver the intended bite after processing and continue to perform throughout the finished product’s shelf life. OV’s range spans fudge and soft caramel pieces, hard caramel, toffee, butterscotch, honeycomb, caramelised nuts and coated inclusions. Each brings a different combination of flavour, texture and functionality to bakery, chocolate, ice cream and confectionery.

Get to Know OV: Turning Trends Into Opportunities

Our customers usually do not need us to tell them that something is trending. They are watching their markets too. What we can bring is a wider view of what is happening, help connect the dots and translate those movements into something relevant within the world of sweet ingredients. Because spotting a trend is one thing. Understanding what you could do with it is much more interesting. As part of our Get to Know OV series, we are looking at how market insight, Marketing, New Product Development and our specialist expertise come together to turn what is happening around us into ideas that can inspire our customers.
